October 1st. You know what that means don’t you? It’s Breast Cancer Awareness Month! I really enjoy months that are dedicated to bringing awareness to issues like cancer because more than ever before people are being diagnosed with this disease. 22.9% of cancer cases worldwide are breast cancer; and although it is 100 times more likely to occur in women, men can still get it, so fellas, this month isn’t just for the ladies.
For some women (and men) feeling up their breasts can feel weird but self breast examinations are one of the best measures for early detection; while prognosis and survival rates for breast cancer vary greatly depending on the cancer type, stage, treatment, and where you live. Survival rates in the Western world are high; for example, more than 8 out of 10 women (84%) in England diagnosed with breast cancer survive for at least 5 years; however, in developing countries survival rates are much poorer. Now I think we can all agree that food is medicine, or poison, depending on what we choose to eat; and today, I want to focus on eggs.
I cannot say enough good things about eggs; and I believe that they are one of nature’s most perfect foods. In addition to being inexpensive and versatile in the kitchen, eggs are one of the richest sources of protein on the planet. Eggs contain all nine essential amino acids and are loaded with vitamins and nutrients that benefit our brains, eyes and heart; while also being one of the best sources of choline, which is not a vitamin, but an essential nutrient required for good health.
Still not convinced? Well, a study conducted in 2005 took note of the difference in breast cancer incidence in Chinese women as they migrated from Hong Kong to the United States and observed that breast cancer rates more than doubled. They looked at changes in diet and discovered two patterns: the first was that women who ate more fruits and vegetables were significantly less likely to develop breast cancer, which comes as no surprise. But the most shocking revelation was that women who ate the most eggs were also the least likely to have breast cancer. By eating six eggs a week versus two eggs per week they lowered their risk of developing breast cancer by 44%.
So let’s talk consumption.
In my professional opinion, it’s pretty hard to mess up eggs; from scrambled to poached, there are so many ways to consume this nutritional powerhouse. However, recently I have been baking eggs like nobody’s business. And if you are a novice cook, listen up; eggs offer the opportunity to impress, because when it comes to cooking them, the learning curve is anything but steep.
This baked egg recipe is perfect for any meal and the prep time is minimal; and, as with most dishes I make, its completely custom. I used peas, smoked salmon and parsley but you could easily use chives, fennel, asparagus, spinach, leeks- anything really.

3 large eggs
1 ½ tsp flat leaf parsley, chopped
2 oz smoked salmon, flaked
1/3 cup green peas
1 tsp olive oil
¼ tsp crushed chili flakes
¼ tsp salt
Preheat oven to 350oF.
In a large bowl combine the eggs, parsley, smoked salmon, peas, chili flakes and salt; whisk until well combined. Grease an oven safe dish with the olive oil. Pour the egg mixture into the prepared dish.
Bake for 25 minutes or until a toothpick can be inserted and comes out clean.
